Tide & Boar Gastropub

The Tide & Boar Gastropub, nestled between the Bay of Fundy and the Northumerland Strait, is blessed with distinct advantages. They constantly update their menu with seasonal, fresh, local fare, both on your plate and in your glass. Tide & Boar’s craft beer selection is ever-evolving and their cocktails are made with care.

“This cocktail is named after my grandfather Herbie’s camp, where we would spend lots of time in the river and around his campfire. I can picture no better place to drink a cocktail like this.”

– Chad Steeves, Owner / Chef / Bartender / Brewmaster

The Camp

2 oz Tide & Boar Herbie’s
Bourbon Barrel Aged Stout
1 oz Woodford Reserve Bourbon
1 Egg white
1 oz Vanilla lactose syrup

Make the vanilla syrup: Mix 1 cup of lactose sugar with 1 cup of water. Bring to a boil. Remove from heat and add one pod of fresh vanilla bean seeds. Let steep and then chill.

Chad uses an Imperial Stout he brewed then aged for 9 months in a Woodford Reserve barrel. Substitute with another imperial stout, if desired.

Add beer to a mixing glass, stir with a bar spoon for about 20 seconds to remove any carbonation. Add the remaining ingredients and shake for about 40 shakes. Add ice and shake again, strain and serve in a chilled double old fashioned glass with one large ice cube.
