  • 4 apples, cored
  • 2 bottles amber lager
  • 2-4 cups hot water
  • 2 cups brown sugar, packed
  • ¾ cup heavy cream
  • 2 tbsp butter
  • Chopped nuts for topping

In a large saucepan, add apples and cover with beer. Add enough water so that the apples are no longer touching the bottom of the pot. Bring to a boil, then reduce heat to simmer. Roll the apples with a fork frequently to ensure that all side of the apples get evenly cooked. Poach for 20 minutes or until the apples are fork tender. Use a slotted spoon to remove the apples.

Raise the heat to a strong boil and reduce the liquid to 1 cup (20-30 minutes). Remove from heat and add brown sugar. Stir until dissolved. Bring to a boil until slightly thickened. Remove from heat and stir until the bubbling subsides. Add cream and butter, and stir to combine.

Cool completely.

Cut the apples into slices, coat in caramel and top with chopped nuts. Make it extra decadent on crepes or with a scoop of vanilla ice cream!
