Jim Beam Black Label Bourbon

  • 8 peaches, peeled and sliced
  • ¼ cup bourbon
  • 2 tbsp. cornstarch
  • 1 ½ tsp. ground cinnamon
  • ½ tsp. nutmeg
  • ½ cup brown sugar
  • ½ stick unsalted butter, melted
  • 1 ½ cups all-purpose flour
  • 2 tsp. baking powder
  • Pinch of salt
  • 2 sticks unsalted butter, cut into small cubes
  • ¾ cup heavy cream
Preheat oven to 375 °F.

In a large bowl, mix together peaches, bourbon, cornstarch, cinnamon, nutmeg and ¼ of the brown sugar. Toss to coat peaches. In a large pan, melt ½ stick of butter and add peach mixture. Cook over medium-high until heated through (about 6 minutes).

In another bowl, mix remaining brown sugar, flour, baking powder, and salt. Add the cubed butter and mix with your hands until it resembles coarse crumbs. Being careful not to overwork it, mix in cream until it comes together to form a dough.

Add peaches to a greased baking 8 x 8” baking dish. Top with the dough. Bake for 45 minutes or until brown.
