Samuel Adams Rebel IPA

  • 4 yellow potatoes, peeled, cooked and cooled
  • 2 leeks, white parts only, sliced
  • 1 fennel bulb, chopped (about ½ cup)
  • 1 onion, chopped
  • 8 cloves garlic, halved
  • 4 tbsp extra virgin olive oil
  • 2 cups vegetable stock
  • 473 ml IPA beer
  • ½ tsp smoked paprika
  • Pinch of cayenne
  • Salt and pepper to taste
  • Chopped chives for garnish
In a large saucepan over medium heat, add 1 tbsp of olive oil to pan. Sauté leeks, fennel, onion and garlic until vegetables are slightly browned.

In a large blender, combine cooled potatoes, sautéed vegetables, vegetable stock, IPA, spices and salt and pepper. Blend until smooth and creamy. Taste and adjust seasonings as needed.

To serve, warm the soup and pour into bowls. Top with a sprinkle of black pepper and chopped chives.
