French Onion and Whisky Soup

  • 2 large red onions, sliced
  • 2 large yellow onions, sliced
  • 1 ½ sticks butter
  • 2 garlic cloves, minced
  • ½ cup whisky

  • 4 cups beef broth
  • Salt and pepper
  • Croutons
  • Cheese slices – Gruyere, Mozzarella, or Provolone
  • ¼ cup Parmesan Cheese

In a large soup pot, melt the butter over medium heat. Once melted, add the onions and cook over medium heat until caramelized (about an hour). Add the garlic and mix well. Reduce the heat to low and add the whisky. Let the alcohol burn off for about a minute. Add the beef broth. Cover and simmer until ready to serve.

When ready to serve, season with salt and pepper to taste. Turn on broiler. Pour soup into oven-safe bowls and float croutons or toast slices on top. Quickly add sliced cheese and a sprinkle of Parmesan Cheese. Put under the broiler right away for 2-3 minutes until the cheese is melted and golden.
