Tips for mastering the frozen cocktail:

USE THE BEST FLAVOURS: Use fresh juice and high-end mixers

CHILL YOUR SPIRITS: cold ingredients mean a colder drink and less melted ice (also known as “water”)

SKIP THE BLENDER: make your drink “granita-style”! Granita is an Italian frozen dessert, and an easy technique to avoid “watering down” when the ice melts, or “bubbling over” when you put carbonated mixers in a blender. The result is a full flavour cocktail with the texture of shaved ice.

How to make a granita-style cocktail:

Mix cocktail ingredients in a shallow dish (don’t add ice, but you can add water to taste)

Stir, then place in the freezer

Check and stir every half hour until frozen

To serve, use a fork to scrape into glasses
