NB Cod in Tomatoes

Mix together and cook for 15 minutes:

  • 2 cups tomato juice
  • Large can stewed tomatoes
  • 1 small can tomato paste
  • 3 medium onions, diced
  • 7 – 8 shallots, diced
  • 1 green pepper, diced
  • Pinch of salt and pepper
  • Pinch of parsley

Add ¼ cup white wine and remove from heat. Arrange 12 pieces of cod fillets in a casserole dish and cover with tomato mixture. Bake at 350°F for 25 minutes. Optional – top with mozzarella cheese for the last 5 minutes of baking.
