Make it with
St-Ambroise Pumpkin Ale
- 1 yellow cake mix
- 1 cup canned pumpkin
- ¾ cup pumpkin ale
- 2 eggs
- ½ tsp cinnamon
Mix cake mix, pumpkin, beer, eggs and cinnamon until just combined. Spoon batter evenly into 24 prepared muffin tins. Bake at 350 °F for about 20 minutes (or until a toothpick inserted in the middle comes out clean).
- 2 (8 oz.) packages of cream cheese, softened
- ½ cup unsalted butter, softened
- 1 tsp vanilla
- 4 cups powdered sugar
Blend all ingredients together until smooth.
- 1 cup all-purpose flour
- ½ cup copped nuts (walnuts or pecans)
- ¼ cup brown sugar
- 1 tsp cinnamon
- 6 tbsp unsalted butter, cubed
Mix together flour, nuts, brown sugar and cinnamon. Cut in butter until small chunks form. Bake for 20-30 minutes at 350 °F, stirring every 5 minutes.
To assemble, frost cooled cupcakes and sprinkle with topping.
